Ground Beef Flautas

You're just a few minutes away from tasting these delicious beef flautas! Loaded with beans, corn, and so much yummy spices.

What is a Flauta?

Similar to the taquito, the flauta is made with a large flour shell that is rolled with a meat or bean filling and fried until it gets crispy. The taquito is made the same way, but with a smaller corn shell.


Ingredients:

  1. 1lb ground beef

  2. Cooking Spray

  3. 1 tsp Olive Oil

  4. 1 cup chopped yellow onion (white or red also work)

  5. 2 tsp chili powder

  6. 3/4 tsp ground cumin

  7. 1/2 tsp salt

  8. 4-5 Garlic cloves, chopped

  9. 1 can Pinto beans

  10. 1 can mild green chilies

  11. 1 lime (for juice)

  12. 1 cup of sweet corn kernels (4 small cobs)

  13. 12 Flour Tortillas

First thing your going to want to do is season the meat with some cumin, and black peper to your liking and then beat the crap out of it like there's no tomorrow! Then you're gonna place it in the fridge to sit for about an hour or so.


Crank your oven up to 400F. Grab a large baking sheet and coat it with a little cooking spray.


Heat up the oil in a large sauté pan over a medium heat and the throw in your onions and garlic. Once the onions and garlic have turned a light brown (5 mins), go ahead and toss in the chili powder, the cumin, and the salt. Cook for about 30 seconds and then take off the heat.


Now you're going to mash the beans, chilies, and lime juice together in a large bowl. If you don't have a masher then you can just use your hands, plastic gloves! Mash everything together till it turns into a paste. It's okay to have a few whole beans in the mix, you won't be able to get them all. Add in the corn, onions and garlic and stir that 'ish up!


Warm up the tortillas and then take about two tablespoons of filling to spread in a nice line along the bottom of the tortilla and then roll your tortilla from bottom to top.


Place each flauta into your baking sheet with the crease facing down, keep them about an inch from each other.


Coat the top with a little cooking spray and let bake for 10 mins, take them out to check if the bottom is golden. If the bottom isn't golden then place them back in for a few more mins. If the bottom is golden then turn them over and add shredded cheese if you want them to be gooeier and cook for 5-7 mins.


Once they are ready you can serve lettuce and salsa with them.
